Gluen Free Pumpkin Bread

This is a delicious Pumpkin Bread That is Gluten Free, No wheat, barley or oats. A must for the holidays.
Easy to make.
1 1/2 cups sugar
1 2/3 cups Bob's Red Mill All purpose flour
1 1/4 tsp. Bob's Red Mill Xanthan Gum(helps hold bread together so it isn't so crumbly)
1/4 tsp. baking powder
1 tsp. soda
3/4 tsp. salt
1/2 tsp. ground cloves
1/2 tsp. cinnamon (may use  1 tsp. pumpkin pie spice rather than cloves and cinn.)
1/2 cup veg. oil
1/2 cup orange crush soda pop(or may use water or juice)
1 cup canned pumpkin
2 eggs or 1/2 cup egg beaters

Sift dry ingredients, add oil, liquid, pumpkin, eggs and mix well.  Fold in 1/2 cup or chopped nuts if desired, may add 3/4 cup dried fruit such as raisins, cranraisins, or dried cherries.
put in loaf pain and bake for 1 hour 15 min in a 325 degree oven.
Can't tell the difference from any other Pumpkin Bread!!
