Ok so it is so Hot in Oklahoma right now we about to cook!
Ever wonder how those fruity treats "Fruit Roll Ups" are made? What a fun and convenient way to get your daily fruit that you can take anywhere.
Here is a good Recipe for
Apricot, Peach or Nectarine Leathers(that is what the roll ups are called. They don't taste like leather thank goodness).
1 gallon pitted apricots peaches or nectarines
1 1/2 cups unsweetened pineapple juice
1/4 cup mild-flavor honey
Place the pitted fruit and pineapple juice in a large, heavy pot. Cover the pot and set it over low leat. Cook the fruit until it is soft. Drain off the juice well, lifting the fruit from the sides of the strainer to allow all the juice to run out freely. The more juice strained out, the quicker the process of making the roll ups. The juice is too dood to discard. freeze it for later or drink it fresh as juice.
Run the fruit through a blender, food processor. If you want a very smooth finished product remove the skins . But alot of the nutrients are in the skins. Weeten the pulp to taste with honey. The pulp should be as thick as a thick applesauce or more so. spread it on lightly oiled baking sheets or baking sheets covered with freezer paper or plastic wrap so that it is 1/4 inchd thick. DO NOT USE FOIL OR WAXED PAPER AS THE LEATHER WILL STICK TO THESE.
Place the baking sheets in a low over for food dryer. if using an oven turn the coltrold to warm(120 degrees F.and leave the oven door slightly open to allow moisture to escape. Dries in 12 hours in the oven but I use a dehydrator and it takes about 6-8 hours. and saves on energy.
When the leather is dry enough to lift or gently pull from the baking sheets, put the leather on cake racks so that it can dry on both sides. Dust the leather lightly with cornstarch. to absorb any stickiness left. You can cut in strips and put plastic wrap on top and roll into roll so it doesn't stick together when you unwrap it.
These are delicious and so much healthier to make yourself. No preservatives that some store bought ones have. Your family will love them for a quick snack to take with them. and they aren't messy!!
